Otherwise known as cross country skiing, 'nordic' skiing has two disciplines: Classic and Skate. Classic skiing is just as it sounds - the traditional skiing technique that uses parallel strides to mimic walking. Skate skiing is more similar to ice skating, and is faster than classic. Classic skiing can be done on a wide range of snowy surfaces, but skate skiing requires specially groomed tracks, as well as its own set of equipment.
Generally, beginners start with classic skiing as a foundation as it can be easier to master and does not put as much pressure on your cardio, though it is still a good idea to have a good level of fitness and sense of balance. Skate skiing, on the other hand, is a high cardio workout - appeaing to those who like the thrill of speed and a great workout. If you haven't tried it, it's best to start out with a lesson to get the hang of the basics, then you can hit the groomed trails on your own and practice.
